Horwood House serves up ‘Buckinghamshire Burger’ to champion local produce on National Burger Day

A Buckinghamshire hotel put local sourcing on the menu last week with the creation of its own ‘Buckinghamshire Burger’ – designed to celebrate British produce while making full use of ingredients in the kitchen.

Horwood House Hotel, a 4-star country house hotel and conference venue in Little Horwood, near Milton Keynes, marked National Burger Day (Thursday 27th August) with the special burger created by Executive Chef Sean Dell.

At its heart is a 7oz 100% British beef burger, supplied through Buckinghamshire-based Signature Catering Butchers, topped with aged cheddar cheese, grilled smoked streaky bacon, house-pickled onion, gherkins, shredded iceberg lettuce and homemade burger sauce in a toasted brioche bun.

What makes the burger unique is that it has also been designed to make more of the produce already coming into the hotel’s kitchen.

The hotel’s butcher salt-ages steaks supplied for its Harry’s Bar & Kitchen restaurant, with suitable trimmings from the process then minced and used in the burgers. As well as reducing waste, it allows the kitchen team to retain greater traceability over the meat being used, with no additives or preservatives added to the beef.

Sean said: “For me, championing local produce is about showcasing the quality of ingredients available on our doorstep, while supporting the farmers, growers, producers and suppliers who make that possible.

“Wherever we can, working with local suppliers gives us a much stronger connection to where our food comes from. Good food starts with good ingredients, and we want those ingredients, and the people behind them, to be at the heart of what we serve.”

Caroline Morrone, General Manager at Horwood House Hotel, added: “Being an independent hotel in the heart of Buckinghamshire, we want our food to have a genuine connection to the place we call home. The Buckinghamshire Burger is a simple way of celebrating that – working with suppliers close to us where we can, making better use of the ingredients coming into our kitchen and creating something that feels distinctly Horwood House.”

The Buckinghamshire Burger forms part of Horwood’s wider focus on sustainability across its 38-acre estate, with ongoing environmental initiatives including beehives, rewilding, tree planting and organic gardening projects.
